Hum, Hum, HUMMUS!!!!

For anyone struggling with healthy snack ideas for the kids, Hummus is a great place to start. I tested this out on my public school students who are not used to eating "Healthy" snacks while at school. In fact, most of the time Donuts, cookies and cupcakes are brought in to share. And then you have the "everyday" snacks that they get from the vending machines, which include Doritos, Cookies, Chips and pretzels.

So today, I created a presentation of "HUMMUS BOATS!" It was an idea I received last night from my friend Dawne. It's very simple to do and makes for lots of great conversations! Simply cut a Red Bell Pepper in half, and fill the cavity with Homemade Hummus. Then add sliced carrot sticks for Oars, Organic Pretzels for the Pier, Cucumber slices for pads, raisins for people and serve on a bed of Kale!!! Sound yummy? They thought it was. They used the veggies to scoop out the hummus, and then we cut up the red peppers so that each student had a slice. I couldn't believe how fast it all went and just how much they enjoyed it! Mission Accomplished!!



Here's the recipe for Homemade Hummus:

4 cloves of Fresh Garlic (finely chopped)
15 ounces of Organic Garbanzo Beans (Soaked overnight and cooked for approx 1 hr)
2 Tablespoons of "Organic Tahini" by Once Again
1/4-1/2 cup of filtered water
2 tablespoons of Freshly squeezed Organic Lemon Juice
1/2 tsp gluten free, Organic Tamari, or Soy Sauce
1/2 tsp of Organic Cumin
1/4 tsp of Organic Ground Coriander
a dash of Cayenne pepper
Optional: 1 Tablespoon of finely chopped parsley

Add all the above ingredients to a High Powered Blender, and blend until creamy! You can eat warm or chill in the fridge for an hour. When taking out of the fridge, allow the hummus to thaw until it reaches room temperature.

Kale Chips


Many Mamas want to know how to get "greens" into their kids' diet? Well, a tried and true way to do this is by purchasing Organic Greens and making them into a yummy, crunchy chip? Interested in trying this simple idea out on our kiddies? Okay, but if you try out the recipe you must report back and let us know how it went. Deal? Great!!! Here's the recipe I use the most, but there are many other varieties for making Kale chips. This is quick and easy for a full-time working mom! Enjoy!

Prep Time:

10minutes

Cooking Time:

10 minutes

Yields:

10 servings or more

Ingredients:

1 to 2 bunches kale

Olive Oil

Directions:

1. Preheat oven to 425 degrees.

2. Remove kale from stalk, leaving the greens in large pieces.

3. Place a little olive oil in a bowl,

4. Dip your fingers and rub a very light coat of oil over the kale.

5. Place kale on baking sheet

6. Bake for 5 minutes or until it starts to turn a bit brown.

7. Keep an eye on it as it can burn quickly.

8. Turn the kale over and bake with the other side up.

9. Remove and serve


Notes:

Try different kinds of kale or collard greens.

For added flavor sprinkle with a little salt or spice, such as curry or cumin after rubbing on olive oil.

For an extra nutrition boost, try adding Nutritional Yeast Flakes!

Do you really think I LIKE cooking?

So, it's come to my attention that many of my followers have misinterpreted my love for food to mean I LOVE to COOK!!! Nothing could be farther from the truth!!! Lol!! I'm not sure how I conveyed that message to you, but thinking back on it now I can see how you would make that assumption.

Well, here's the truth about me and cooking! I never liked cooking!!! There, I've said it. Although I thought I liked cooking when I first had my own apartment, I have to admit, it got old fast. I hate following recipes. There was always an ingredient I didn't have on hand, so therefore the recipe was tossed aside. If I tried following lengthy, intricate, detailed recipes, it became way too much work for me. I quickly became discouraged and believed cooking wasn't for me. Let's face it, it was much easier, less stressful and WAY MORE Delicious to eat out!

What seemed to work was cooking one or two meals a week, packing frozen "diet" or "healthy" lunches and then heading out to dine for dinners. I soon found myself in my early 20's with GERD, IBS, a Haital Hernia, PMS, and Barrett's Disease.

Barrett's Disease can lead to Cancer. It is caused from years of Acid Reflux washing over the esophagus. Over time, the stomach cells start growing up into your Esophagus to protect it from the acid, but any time there is abnormal cell growth it can lead to Cancer. I finally woke up and realized something had to change.

After working with Nutritionist, Nancy Guberti, I started eating Organic foods, and eliminated soda, sugar and processed foods from my diet. While Nancy completely helped me to heal my gut, I still didn't like cooking. It wasn't until last year when I joined The Institute for Integrative Nutrition that I began to learn how to cook quick, simply, healthy meals in under 30 minutes!!! Today, I often post my meals/recipes on Facebook and here on my blog but I thought you should know I still truly do not love cooking. I do however, love to eat. Eating has become more of a sacred ritual in our home. We always begin with a prayer of thanksgiving, then we sit together, as a family and enjoy the fresh, healthy food that nourishes our bodies and our souls!

Beans, Beans, Beans!


Lately I have been on a BEAN - kick!!! It seems that I am finding more and more meals that incorporate Beans as a main ingredient. The more I learn about the Meat Industry, the more appealing eating beans are becoming to me.

I grew up eating lots of meat. I loved meat - Steak, pork, sausage, burgers, lamb chops, ground meat sauce and chicken were often found on our dinner plates. As I've learned more about nutrition I am beginning to enjoy new foods that give me tons of energy and are more sustainable to our earth.

Dinner has become more about planning ahead (in my mind that is, because I don't have time to actually get it onto a piece of paper) and doing some preparation in advance.

While I'm food shopping on Saturday I'll make a mental note of the beans we haven't had in a while. Right now I'm thinking of Mung, Lentil, and Adzuki beans. So, before I head out to shop I'll check out some recipes online, or if I have a few "staple" ones, I'll just resort to those for an easy week.

When I get home from food shopping, I measure out some beans, put them in a bowl, add water and soak for 8 hours overnight. Sunday morning I begin cooking the beans. Once cooked and rinsed I return the beans back to a container to store in my fridge. I'll use the beans in my menu for the week. This system is very effective, and it makes cooking SO much easier when I return home exhausted. *As a side note, I don't serve my family anything processed. We don't buy anything in a metal can or boxed. Ninety percent of our meals are strictly made from scratch. It makes a huge difference and it's quite manageable once you have a system in place.

Here are a few meals that I've recently tried and posted on Facebook. Many of you asked for the recipes, so I'm including these below. As always, let me know if you try them, tweak them, and how your family reacts to them as well.

I made these for the first time tonight- Sweet Potato Burritos!! My husband and I thought they were really tasty but my son wasn't too keen on all the spices. It think it was a bit too much flavor for his liking. Other than that, I'd give it 4 stars!

How does your food SERVE you?


I know that it sounds like a bit of an Oxymoron, to ask how your food serves you, when it is usually you serving the food.

Many people don't look at food the way that I've learned to "see" it in my life. Many of us just don't take the time to "think" about how food is serving our bodies. In the past, I've often worried about the types of products I used on my hair and skin and the brands of cosmetics I purchased, but I never thought of food as nourishment for my mind, body and soul. I never knew that the food I was putting in my body affected every ounce of who I am and how I live.

Within these past three years of my life, I've found the true value of food. I've learned which foods serve me so that I can live the type of life I've always dreamed of! Since starting on this journey of wellness I can tell you I have undergone a huge transformation due to FOOD! I am now calmer, more relaxed, my mind is clearer, I have more patience, experience more joy, have returned to my high school weight, and I've been able to handle the stress in my life much more effectively.

How is food helping you to live the life you always dreamed you would?
